My fiancé went to Costa Rica in January of 2018, and came back pescatarian. Since I’m cook of the household, I’ve had to adapt to keep my lady fed!
Every now and then, I experiment with new recipes. One day I felt like buffalo wings, so the inspiration hit me to grab some oyster mushrooms (king oyster work the best, and as scallops too), eggs (which she still thankfully eats), panko and hot sauce. I opted for the Guy Fieri hot sauce for the fun factor but ended up mixing extra Red Hot for some umph.
It turned out amaze-balls, and even Lola was losing her mind:
Another HUGE hit in our household is Beyond Meat’s Beyond Burger. Before it sold out everywhere, and being next to impossible to buy in Canada, we were about to buy a bunch in a local specialty shop, Umami.
Here’s what it looks like uncooked:

The brown pucks with the fake grill mark in the back are Yves burgers, which aren’t terrible in a pinch. But in the forefront, the juicy, delicious, you-wouldn’t-know-it’s-not-beef Beyond Burger patty. They look, feel, and smell legit and as a meat-eater, I will take this any day over a beef patty! It even flares up on the grill.
I’d show you an “after” photo but these things were way too good – we scarfed them up like Lola eating anything we drop on the floor.
So while we can’t get the patties until distribution happens in Canada, there’s one way you can try them out: A&W, of all places! They started selling them Canada-wide, though not as thick as the patty we bought in-store. I suggest you try it out.
